Christmas Eve

It's Christmas Eve.  Only one more trip to the grocery store for Christmas dinner supplies.  I took an amazing trip to Italy last summer and went to a cooking school in Sicily.  Check it out at lovesicily.com.  We ate amazing food, learned to cook some outstanding dishes and took in the culture and uniqueness of the island.
                                   
This is looking at the fantastic town of Modica from the balcony of the cookery.  Katia Amore, along with her husband Ronald, own and operate it.  Along with new recipes I came back with an appreciation of Olive Oil and will only ever use the good stuff.  Katia left me with this quote about Olive Oil; "Not all expensive olive oil is good, but all cheap olive oil is bad."  Do try and find this one, Mastri Di San Basilio.  We visited the grove, met the grower, had a tour and then sat down and did an oil tasting followed by a luncheon prepared by his wife.  To order the oil go to alice.com.  It's a great little website with a ton of things and if you order 6 items shipping is free.
Anywho, back to Christmas... I will be making a pasta with mint sauce.  Half of it will have prosciutto in it the other half will cater to the vegetarians in the family.  In Sicily we made it with monk fish.  It was delish but the fish in our part of the country right now...not so great.
